Yay! First day of work! I had butterflies in my stomach! But thanks to encouraging words from my family, my BF, my friends, and the folks at my new job, I made it through the first day just fine =)

I cooked dinner last night! Clearing out my oven to cook is such a rare occasion and it wasn’t even a holiday! (I think most Asians in America know we really only use the oven as storage for pots and pans LOL)
I made Baked Turkey Tri-Color Ziti! I went with the tri-color ziti and rotini for variety of color and texture and because it’s possibly a little healthier than regular pasta and I didn’t think anyone but I enjoys whole wheat pasta.
One of my cousins was craving baked ziti from Whole Foods and another cousin was craving lasagna so yet another cousin was forcing her to ask me to make my turkey lasagna again. I made it only once like 2 or 3 years ago!
So I decided to mix the two ideas since they seem pretty similar anyway. On the side, I also made Grilled Lime Cayenne Chicken Breast Tenderloin on my Foreman Grill! That recipe is from the BF and isn’t mine to share so I’ll just jump to the one for the ziti!
Baked Turkey Tri-Color Ziti
PASTA
1 pound of uncooked pasta
24 ounces of skim milk ricotta cheese
MEAT SAUCE
1 purple onion
1 pound of lean ground turkey
32 ounces of pasta sauce (I used regular spaghetti sauce)
LAYERING
9”x13” baking dish or something of similar size (I used a casserole dish)
1 pound of shredded skim milk mozzarella
grated parmesan cheese
Half of the ziti/ricotta mix
Half of the mozzarella
Half of the meat sauce
Rest of the ziti/ricotta mix
Rest of the mozzarella (leave some for a light layer on top)
Rest of the meat sauce
Top with a light layer of mozzarella or parmesan (I went with the mozz)
Bake in preheated oven at 350degrees Fahrenheit for 30 minutes or until cheese melts
Enjoy!
We all ended up overeating so I think it went over well! Random cheesy meaty pasta cravings satiated! The leftovers turned into 3-meals-in-1 for Day 2 for me :::BURP:::
